Jerusalem Artichoke and Mushroom Soup

  • Jerusalem artichoke chips and mushroom oil. Served with sourdough bread and roasted butter.

 

Main Courses

Roasted Beetroot and Goat Cheese

  • Beetroot puree, roasted beetroot, pine nuts, arugula, fried goat cheese, and balsamic syrup flavored with crowberry.

Lake Inari Burbot

  • Confit-cooked arctic burbot, beetroot puree, asparagus, and hollandaise sauce flavored with horseradish.

Reindeer Fillet

  • Beetroot puree, roasted root vegetables, gamekeeper's sauce, and thyme-flavored redcurrant jelly.

 

Dessert

Lapland Berry Dessert Collection

  • Lingonberry macaron, white chocolate-blueberry ganache, cloudberry sorbet, and "lichen cake."
