- Confit-cooked arctic burbot, beetroot puree, asparagus, and hollandaise sauce flavored with horseradish.
Reindeer Fillet
- Beetroot puree, roasted root vegetables, gamekeeper's sauce, and thyme-flavored redcurrant jelly.

Lapland Berry Dessert Collection
- Lingonberry macaron, white chocolate-blueberry ganache, cloudberry sorbet, and "lichen cake."
